How to make Eggplant Salad. Visit www.summerkitchen.tv to experience a new video cookbook with delicious summertime recipes, perfect for your picnic basket or backyard BBQ table. Ingredients 1/4 cup of extra virgin olive oil 1 tsp of turmeric 1 tsp of cumin 1/2 tsp of red pepper flakes 1/2 cup of lime juice 8 cloves of garlic 1/2 cup of cilantro 3 lbs of eggplant, 1 inch thick slices 3 plum tomatoes, halved lengthwise 4 peppers, halved and seeded 1 jalapeno, halved and seeded Instructions 1. In a blender combine olive oil, turmeric, cumin, red pepper flakes, lime juice, garlic, and cilantro and pulse until blended. 2. Toss the marinade over the cut vegetables and let sit for 30 minutes. 3. Preheat the grill to medium heat. 4. Grill all the vegetables for about 4-5 minutes until cooked but not mushy. 5. Let the vegetables chill and then cut into bite size pieces. 6. Garnish with lemon juice, olive oil, and salt.

Outdoor kitchens are also a great place for canning and processing the fall harvest on the farm. Salatin uses an outdoor kitchen for processing all of his chickens. Outdoor kitchens are an excellent way to feed those farm interns! This video includes a lovely cob oven and cob bench. And there is a quick peek at some amazing braided garlic.
